42D57AAF-063C-43FB-BF58-E1A472682334.jpegI have seen variations of this recipe alllllll over the net! I was skeptical about the thighs because, dark meat. But they came out so good! My sons absolutely loved them and both asked for seconds!

I will also be trying this glaze recipe with salmon+shrimp. Yummm!

This recipe also works with chicken breasts!

Here’s what you’ll need:

•6 Chicken Thighs

•Salt, Pepper, Garlic Powder (to season)

•Olive Oil

•1/3 Cup Honey

•1/4 Cup Water

•1 Tablespoon Soy Sauce

•4 Garlic Cloves, Minced

•1 Tablespoon Brown Sugar

Season Thighs with s+p and garlic powder. Heat Olive Oil in a large cast iron skillet (a regular pan will work also). Place thighs, skin side down into the pan.

Cook chicken through (20-25 minutes). Add garlic and brown (30 seconds) next add honey, water, and soy sauce. Reduce sauce for 5 minutes. Sprinkle brown sugar over chicken. Baste each thigh with glaze. Top with scallions and cilantro! 26ABA1E5-6EE0-47E3-9CCC-AF1E495825AF.jpeg

Crab Stuffed Salmon

Posted on January 4, 2017

img_4665Salmon is my absolute favorite protein. I will eat it for breakfast, lunch, and dinner! For one of my dear Mom Meals® Clients I created this glorious crab stuffed Salmon.

Its fairly simple and fool proof.

Heres what you’ll need:

•1 lb Fresh Salmon Filet

•4oz Imitation or Jumbo Lump Crab Meat

•  4oz Softened Cream Cheese

•2 TBSP Mayonnaise (not salad dressing ie Miracle Whip)

•Juice from 1 lemon

•1 oz Fresh Mozzarella, chopped

•Spinach (how ever much your heart desires)

•1 TBSP Old Bay Seasoning

•Italian Panko Bread Crumbs

•2  TBSP Grated Parmesan

•Salt and Pepper to season

Whisk together Cream Cheese, Mayo, and Lemon Juice until silky smooth. Add Crab, old bay and spinach to mixture.

Preheat oven to 400 degrees.

Place Salmon filet on a baking sheet or in a dish. Slice horizontally creating a pocket (careful not to slice all the way through). Stuff Salmon with crab mixture. Sprinkle on mozzarella, grated Parmesan, and bread crumbs.

Bake for 18-25 minutes!

Social Mommy-An October to Remember

Posted on December 6, 2016

Chandler and AlexanderOctober is a HUGE month for us! All four of our birthdays are in October so its always a great time!

This year Alexander turned ONE! We hosted family and friends for a Safari themed birthday bash. His cake was purchased at Sam’s Club. I added the animal figurines (purchased from Michael’s) We had a hot dog bar, nacho bar, mini spaghetti cups, and lots of sugary treats for the children. The party goers enjoyed having their faces painted as well as creating their own jungle masks. It was a great time!Safari Party

Safari Cakeimg_3316Dirt CupsSafari Party Face Painting Safari PartyChandler turned 3, we enjoyed a quiet day at the park (of course there was cake) followed by pizza. Since we decided on a intimate celebration I created balloon memories for him to wake up to! I simply printed images from birth-now and attached them to ballons! Balloon MemoriesBirthday PancakesCake At The Park fullsizerenderDeAndre and I both turned 29 and we celebrated at our friends 80s themed birthday bash! We especially loved dressing up and had a great night away from the children! 80s bash

We attended Harvest Fest at our church. We came dressed up as Milk & Cookies! It was a hit. I hand crafted each of our costumes, with the exception of the milk mask. It took me in total, 16 hours to complete.

I simply used light brown felt, dark brown felt, black ribbon and pillow stuffing. I’m far from a seamstress, but I figured it out and conquered!

With Christmas right aroud the corner I am excited to create our ugly Christmas sweaters!

Happy Holidays, everyone!
